homemade crab cakes

ingredients:
  • 1 cup crabmeat
  • 1 cup chopped sweet peppers and corn
  • 1 whole egg
  • 2 tablespoon parsley
  • 1 tablespoon mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 cup crushed crackers
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • salt and ground black pepper to taste

  • 1 cup dry bread crumbs
directions:

1. combine all ingredients, form into 1/2 inch thick patties, coat with bread crumbs.
2. heat oil in a skillet over medium high heat, cook until golden brown on each side.
