good friday brunch

buttermilk pancakes with a cup of blue mountain coffee
  • 1 egg
  • 1 cup buttermilk
  • 1/4 cup milk
  • 1 tbs melted butter
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbs sugar
  • pinch of sea salt

1. in a medium bowl, whisk together the egg, milk, butter and buttermilk. combine the flour, baking powder, baking soda, sugar and salt. stir until just blended.

2. pour 1/4 cupfuls of batter onto a medium heat skillet. cook until bubbles appear on the surface & brown on both sides. serve with maple syrup. enjoy!
